Quick and Easy Aloo Parathas

 Quick and Easy Aloo Parathas

Aloo Parathas is one of the most popular breakfast dish in Northern India and I will be ever thankful to the person who first came up with these parathas as they are my favorite! The traditional recipe of Aloo Parathas is to knead a dough, prepare potato filling, stuff the potato filling in dough and roll out the parathas and then cook them on the griddle on both the sides.

We will surely make Aloo Paratha's in traditional way very soon but today I am sharing the recipe for quick and easy way of making Aloo Paratha's. This is a perfect recipe to follow when you are in rush on weekday mornings and need to fill lunchboxes for your family and yourself before heading out to office.

Ingredients:

Potatoes- 4 mediums sized, boiled and peeled

Whole Wheat flour- 2 cups (and little extra if needed and also for rolling the parathas)

Green Chillies- 3 or 4 as per your choice

Garlic- 6-7 cloves

Ginger- 1 inch piece

Cumin seeds- 2 teaspoons

Carom seeds- 1 teaspoon

Coriander powder- 3 teaspoon

Lemon- 1

Salt to taste

Oil- 2 teaspoon for dough and as per your choice to apply on parathas

  • In a big bowl, grate the boiled potatoes.
  • Chop green chilies, ginger and garlic and grind them in a grinder with NO water or crush them in mortar and pestle.
  • Add 2 cups of whole wheat flour to the bowl with potatoes.
  • To this add 3 teaspoon coriander powder, salt, ginger and garlic we just prepared and juice of 1 lemon.
  • Mix it all together and knead a soft dough. Once the dough is ready, apply 1 or 2 teaspoon of oil to it and keep it aside for 10 to 15 minutes.
  • Apply little oil on your palm and make medium sized balls of the dough. In the given proportions, we can make around 12 to 13 parathas.
  • Heat the tawa/ griddle on medium flame.
  • Roll out parathas of medium thickness and cook it on tawa/ griddle on both the sides. Apply oil or ghee when cooking the parathas to add flavor to the parathas.
  • Make remaining parathas in similar way and serve them with pickle or yogurt or ketchup as per your choice.

Some recipes that I learnt from my parents, some from my friends and their moms. Some I got from recipe books and some I got from internet.
