Masala Milk and Chia Pudding

 


Ingredients-

4 cups Milk

Few strands of Saffron

1 tsp Cardamom powder

1/4 cup Almonds

1/4 cup Cashewnuts

1/4 cup Pistachios

7-8 pitted dates

4-5 tablespoon Chia seeds


Process-

1- Add little water at the bottom of the pan.

2- Add 4 cups of milk and few strands of saffron.

3- Start heating it at medium heat.

4- Keep stirring continuously once the milk starts boiling. 

5- Continue boiling milk for 5-6 minutes till it reduces to about 2/3 of original quantity.

6- Add 1 tsp Cardamom powder and mix. Turn of the flame and let it cool down a bit.

7- After about 15 to 20 minutes, when the milk is still warm, add 1/4 cups of Almonds, cashews, pistachios and about 7-8 pitted dates. 

8- Cover and keep it aside for about an hour.

9- After an hour, transfer the milk and nuts to blender jar and blend it to make nice smoothie.

10- Transfer the milk to a bowl and add about 4 to 5 table spoons of Chia seeds. Mix it well.

11- Refrigerate for about 4-5 hours.

12- Serve cold or at room temprature topping it with few chopped nuts. Enjoy!
